I recently bought an Epiphone Les Paul Standard, and it's been great so far. However, today I noticed that when I turn the volume knobs down there is no difference in volume until it hits zero, and then it goes completely silent. Any higher than zero, and it goes full blast.

Sounds like the pots are bad. Take the big plastic plate off the back of the guitar and then get a can of that pressurized air (used for cleaning computer keyboards) and blast some air around the pots (the round components that are about the size of the volume knobs). This might or might not work. Your best bet is to replace the pots.
