I've had my guitar for 3 years but I only started playing it in February. Since then, I've played it quite often. Ive never changed the strings. My guitars strings are starting to sound banjo-like - kind of plunky and flattish. Should I change my strings?

I don't fall in with the change the strings every 6 weeks or 2 months crowd. I think that's unnecessary and wasteful for all but a professional player. And even then is a bit excessive. Strings should last a good 6 months if you take care of them and play a lot.
Keep the guitar covered with a blanket or in a gig bag or case when not playing.
I would suggest you change the strings at this point, though. and make sure they are tuned correctly.
After you play, wipe the strings off with a clean cloth to remove sweat and finger oils from them.
You strings will last a long time that way.
I take care of my strings and since I'm not a pro anymore and only play casually, I've had my strings on both of my guitars for two years, and they are still fine.
but after three years of non-use, plus the probability that the strings were not of good quality to start with, do get a good set of D'addario, Martin, Earthwood or Dean Markley light gauge strings and replace them.
