I found a bunch of kits where you order all the parts and put it together for 6 strings. But I want to get an 8 or 7 string for my next guitar. Please provide a link if you find one.

There are none that I know of. You can use Warmoth - http://www.warmoth.com/default.aspx - You can build almost anything with their parts.
Just be aware that it won't be what most folks would consider cheap. I'd say about the price of a decent production model.
