I recently bought a few jacks to repair my electric guitars output jack. However, the jacks I bought were stereo. Is it possible to use these stereo jacks instead of the original mono jack? Also, where should I solder the two wires (one white and one without a casing) to?

Sure, it is possible to do this!
Assuming there are 3 solder lugs on the jack:
Solder the white wire from the output to the lug that goes to the connector on the jack that the tip of a plug contacts when one is plugged in.
Solder the shield ("without a casing") wire to the lug that goes to the connector that the back part of the plug contacts.
Leave the center ring contact lug open.
If there are more than three solder lugs on the jack, it would then have switch contacts built in that are intended (when it's used as a headphone jack) to automatically shut off speakers when a headphone is plugged in. You may be able to tell by careful examination which lugs are the extra ones; leave them open.
