I was wondering if it was possible to use an electric violin pickup on my acoustic violin, then use a female port jack to usb adapter (labeled for use on guitars) to hook it up for my computer for recording. Is this possible? If its not, how can I achieve the same thing for under $100?

Yes, it should work ok depending upon what recording software you are using. Make sure you know how to tell your recording software that the input is coming from a USB port. How to do that should be fully explained in the User's Manual for what ever software you are using to record with.
