In this guitar wireless system I am thinking of buying, you can buy it either with channel T2, T3, or T8. What is the difference or significance of these channels?

The biggest difference is just frequencies. If two or more members in a band are using the same frequency there will be interference. Cutting out, humming, static...that sort of stuff.
However most wireless systems have a knob or screw you can adjust to change the frequency a little. If you find a wireless system that doesn't let you adjust it, just walk away because you'll find it doesn't work that great everywhere.
